Marquesitas
This local treat is made up of a crispy rolled up crepe and contains high quality melted cheese and a sweet filling of your choice. When purchasing a marquesitas around the city, the most excitement comes through watching them be made. The satisfying process involves adding the batter into a waffle like iron press, and then later adding in the cheese and toppings of choice before rolling it all up and having it ready to serve. Sweet toppings such as nutella, jam, peanut butter, cajeta, and chocolate sauce make a perfect combination with the melted cheese.
Panuchos
Slightly cooked on a hot cast iron until puffy, this delicious savoury treat is stuffed with refried beans and then filled with additional toppings of choice such as tomatoes, lettuce, cucumbers, ground beef, chicken, or turkey, avocado, and more. Panuchos deliver an authentic, mouth watering taste that can not easily be recreated.
Salbutes
Similar to Panuchos, this food also consists of crispy biscuits filled with ingredients such as tomatoes, lettuce, cucumbers, and meat type fillings. The only thing missing is the refried beans and extra crispiness.
Salsa De Chile Habanero
Salsa is a common sauce throughout Mexico that has also made its way into America and is a common topping on most Mexican foods. Pozol

Sikil Pak

Tikin Xic Fish
This dry fish is different from others through its spicy marination of adobo de achiote and sour oranges. The fish comes wrapped in a banana leaf after being cooked in an earth oven or delicately steamed. The meal is very filling and definitely creative.
